I ride in saltwater, and I was considering buying a car sub and amp and enclosing them in plexi glass or something to prevent the salty air and water from getting to it. My question is would the amp get too warm in a enclosed box?

You might be able to get away with it if you put fans in the box. If you do a sealed box it will fry the amps from heat.

I ride in saltwater and have 3 JBL car amps in my boat. They are not enclosed, 2 are in the storage area under the passenger seat and one is under the dash.

Both are exposed to salty air but i've not had any issue with them in the past year.

I really wouldn't seal them up, just give them some air to breath and a spray with wd40 etc to prevent corrosion on the terminals.

I would say in salt water you are going to be force into Marine Audio, even with the above mentioned application it has only been one year, I would say unless you want to replace your system every other year, get Marine Audio equipment, it's what is corroting inside that counts not the terminals so much.
