HI, I was woundering if I were wakeboarding, with a jet ski pulling, can I jump as high as if a boat were pulling me?

A jet ski will pretty much have no wake.

Yes.

You can ollie about the same height behind a jet ski or a boat.

That depends on if the boat is in front of the jet ski or if the jet ski is in front of the boat. Also which hemisphere are you in and what is the average temperature and speed/direction of the prevailing winds?

I don't know exactly where your going to but I'm from the south hemisphere (chile) the average temperature is about 23 Cº and know we're starting a non-wind or very little wind period.
