I'd check the thermostat, especially since you just got a new impeller.

I assume that you have checked the intake and the hose between the intake and the water pump. We had a simialr problem a few weeks ago ( mercruiser 315Mag) and thought it might be the water pump/ thermostat, Turned out to be a heap of weed backed up in the hose between the pick up and the pump. Although i would agree with swass. New impellar and the fact that it will hold temp at 180 would tend to indicate that it is the thermo stat. Like i said though just do the simple check and make sure it is getting some water through before pulling it apart.

I do not know where the tranny cooler is in those boats, but the tranny cooler is usually located somewhere in the water intake line that comes from the bottom of the boat (intake) to the impellar, or it is after the impellar but before the manifold. The tranny cooler can also get clogged with weed/gook. I clean mine out every time I change the oil. If the tranny cooler is clogged, this would prevent adequate water from reaching the block and cooling it. Happened on my boat, and was one of two overheating problems on my friends. I always check that first.

I agree with partyb.... My launch is the same way sometimes when it rains the crap off the shore floats around and gets sucked into the tranny cooler. I've had my boat a little over a year and have cleaned mine out twice. There's not a much else that can go wrong. They have a trap thing that can be put on your boat I didn't really think I needed it but it may be helpful in a v-drive since it's harder to work on them.
