- Fresh tortillas (tortilla quality is important)
- Grilled or pan-fried salmon (I do a sort of blackened version with cajun seasoning)
- Shredded red cabbage
- Cilantro
- Ranch dressing or special sauce (better)
Special sauce (stick it all in a blender):
3 cups Ranch dressing
1/4 cup roasted green chilies
1/4 cup jalapeno chilies -- pickled or marinated
1 tablespoon lime juice -- freshly squeezed
1/3 bunch fresh cilantro
1/2 Roma tomato -- diced
Finally, I like to squeeze some fresh lime on it right before eating. _________________ We are wakeboarders and our culture is advanced beyond all that you can possibly comprehend with one hundred percent of your brain. |

hmm guess who jumped on this one?
For a little added flavor, corn tortillas (the small ones) work excellent with fish tacos. Just sear them with a little oil. And the sauce is the big impact player, give it a good blend, the one from 'guess who' sounds pretty tasty! |

Rubio's Fish Taco sauce was printed in Gourmet Magazine a few years back:
1 parts Mayonaise
3 parts Yogurt
kosher salt
Cayenne Pepper
Lemon Juice
But the easiest way is using Regular or Battered Halibut from the freezer section and bake as directed.
I like my Corn tortillas crunchy.
Shredded Cabbage
Diced Tomatoes
Diced Purple onions
Avocado sliced
Cilantro |

Nor*Cal, the only Mexican restuarant I won't eat at (ever again!!) is the roach coach aka the taco truck.

a taco truck was in one of the Sub-Divisions being built around my house, i got a huge a$$ burrito for 3 bucks, it was hella good.

There is this place over on Pacific, next to Naughty Nicks in stockton, Victoria's Taco's, that place kicks ass as well.
