while i've gotten used to the cold weather here in the north i've rediscovered wonderful warm foods that i would never have in Miami like chili, what are your favorite recipes? i'm making chili right now and all i want is chili and anything like it, that i can put in a bunch of stuff, cook all day, and enjoy while it's freezing outside

We Crockpot stuff all of the time in the winter. I'd ridiculous how easy it is. Pork Butt, bbq sauce and spices and you've got pulled-pork when you get home. There are all kinds of recipes for stews as well.

We've got some great crock pot recipes. If you want, I can send them to you. Here's a decent list...

Gives me a chance to fire up the smoker as well

smoker make:
4-5lbs. Smoked brisket or pulled pork or chicken (whichever one you are in the mood to fix)

Large pot combine:
10oz chicken broth (or beef depending on version making)
28oz diced tomato with juice
30 oz. combined of pinto or kidney beans (drained)
3 bell peppers diced
1 cup white onion diced
1 Habanero pepper finely diced
3 Jalapenos finely diced
1 McCormicks chili powder packet
1/2 tbsp garlic powder
1/2 tbsp cumin
Black pepper and sea salt

Simmer together for an hour, and the meat and simmer for a little while longer and serve. I might add some other vegetables to it depending on the mood if I want to make it to a vegetable soup.

If too spicy, use less jalapeno, do not sacrifice the habanero. Habanero is your friend.

Here's a bunch of recipes out of our main recipe book that should give you some ideas. Also, there are some really good online sources and great cookbooks that are all about crockpot style meals.

No peek steak

4 small sirloin or round steaks
1/2 Cup red wine or water
1 can cream of mushroom soup
1 can mushrooms
1 package onion soup mix

Put steak in crock-pot. Mix other ingredients & pour
over steak. Cook on low 8-10 hours, or on high 6-8 hours.
DO NOT OPEN LID!!!

Cut meat while in crock-pot. Serve over noodles.

Italian Beef Roast sandwiches

3-5 lb beef roast
1 can beef broth
1 package dry Italian dressing mix
1 Jar pepperoncini peppers

In a crock-pot, mix together beef broth and dressing mix.
Add roast. Pour whole jar of pepperoncini peppers over top
of roast. Cook on low heat for 10 hours or high heat for 6.
Remove pepper, shred and serve as sandwiches.
Sandwiches are great topped with mozzarella cheese.

I use whole peppers to control the heat. I usually
break open 3 or 4 of the peppers in the crock pot.
If your family likes spicier food, break open more
peppers or use a jar of sliced peppers.


Taco soup

1 can Ro-Tel
1 can ranch style beans
1 can mild chili beans
1 can white hominy
1 can black beans
1 can corn
1 package dry rand dip mix
1 lb ground meat
cheddar cheese
tortilla chips

**ALL CANS UNDRAINED**

Brown meat in large soup pot. Drain. Pour all cans (remember undrained)
over meat. Add dry ranch dip mix. Stir to mix, cook 30 minutes or until
heated through.

Serve with chips. Sprinkle cheese on top of individual bowls.

Potato cheese soup

6-8 large baking potatoes
2 C milk
4 C chicken broth
2/3 C flour
2/3 C butter
8-12 strips of bacon, cooked & broken
1 C sour cream
3 C shredded cheddar cheese
1 small chopped onion
1 minced garlic
salt & pepper to taste

Bake potatoes until soft, peel. Mash or cube potatoes, depending on the
consistency you want your soup.

In a large pot combine butter and clour to make roux. Cook for 1 minute, then
slowly whisk in liquids.

Add all the rest of the ingredients except sour cream. Salt & pepper to taste.
Add sour cream right before serving. Top with additional cheese, if desired.

To reheat: Soup with be thick. Add milk to the consistancy you want. Reheat!

Slow cooker Beef Stroganoff

2 lbs beef stew meat
1 C chopped onion
1 can cream of mushroom soup
1 can cream of onion soup
1 6oz jar sliced mushrooms, drained
1/4 tsp. pepper
1 8oz papckage cream cheese, cubed
1 8oz container sour cream
6 C hot cooked noodles or rice

In a 3 1/2-4 1/2 quart slow cooker, mix beef, onion, soups, mushrooms and pepper.
Cover and cook on low heat for 8-10 hour or until beef is very tender.
Stir in cream cheese until melted. Stir in sour cream. Serve over noodles.

Slow Cooker Cheesy Ravioli Casserole (large serving size)

1 Tbsp oilve oil
1 onion, chopped
1 clove garlic, finely chopped
1 26oz four cheese-floverd sauce
1 15oz can tomato sauce
1 tsp italian seasoning
2 packages (25oz each) frozen beef-filled ravioli
2 C shredded mozzarella cheese
1/4 C fresh chopped parsley

In 10" skillet, heat oil over medium heat. Cook onion and garlic in oil
about 4 minutes, stirring occasionally, until onion is tender. Stir in
spaghetti sauce, tomato sauce and italian seasoning.

Place 1 C of sauce mixutre in bottom on 5-6 quart slow cooker.
Add 1 package frozen ravioli; top with 1 C Cheese. Top with remaining
package of ravioli; top with remaining cheese. Pour remaining sauce over top.

Cover and cook on low for 5-7 hours or ravioli are tender.

Slow cooker chicken and dumplins

4 skinless, bonless chicken breast halves
2 Tblsp butter
2 cans condensed cream of chicken soup
1 onion, finely chopped
2 packages refrigerated biscuit dough, torn into pieces

Place chicken, butter, soup and onion in slow cooker and fill with
enough water to cover.

Cover, cook for 5-6 hours on high or 8-9 hours on low.

30 minutes before serving, place the torn biscuit dough in slow cooker.
Cook until dough is no longer raw in center.

** add frozen carrots and peas to create chicken pot pie!**

I make Chili and Chicken Soup a lot in our slow cooker, don't have the Chili recipe on hand right now but do have the soup:

Chicken and Wild Rice Slow Cooker Soup

2 cans low-sodium chicken broth (or 2 boxes)
2 boneless skinless chicken breasts, cut into bite sized pieces
1 pkg uncle ben's long grain and wild rice mix (including seasoning pkg)
2 cups water (if you used canned broth, 1 if you used boxes)
1 cup sliced celery
1 cup diced carrots (I usually do 1.5 cups shredded carrots, plus 1/2 cup shredded parsnips instead)
1 cup chopped onion
1 tbsp dried parsley
black pepper (about 1/4 tsp or so)
2 bay leaves

* can also add a little beef stock and other vegetables if you want!

Combine all ingredients in slow cooker, mix well... cook on low for about 7 hours, or high for about 4 hours.

No need to cook the chicken first - it'll cook just fine in the soup. Also, I tend to add the rice after it's been cooking for 1-2 hours if I'm home, otherwise it ends up a bit overcooked... If I'm not home while it's cooking then I'll just throw it in at the start.
