My engine is an 85 ford 351 and seems to keep a temp of 150 just fine when idleing around and such.... open her up and she climbs to 200 and stays right around their. Is this a thermostat issue or just what to expect? What do your temp gauges read at WOT?

That seems high and also weird that it climbs that much. I know my boat (97 merc) and my friends (91 merc), run at 140 and 160, no change from idle. Is it still in the green range? It could be a pump, restriction, leak, or thermostat issue. Also, it may be normal if it is still in the green range, but my thoughts are that it isn't.

I have a 2000 merc, and it always runs at 170. You should check out the manual and see what it lists as the temperature it should be running at.

could be a bad gauge itself or a bad exhaust.

Thermostats are fairly cheap and easy to replace. Try that it couldn't hurt.
