What do you think about mounting a Wedge on my 2000 Ski sanger SangAIR??

No, the wedge was designed for malibu's hull, i'd think the hydrodynamics of the wedge would be completely different behind another boat/hull. Plus malibu designs their transoms to support the wedge.

I've seen it done and the owner was really happy. I've also seen someone fabricate a wedge from scratch for an older Malibu. The transom is one of the strongest and thickest parts on just about any boat. If you have a towing eye on the transom then you know it's pretty strong. As for the hydrodynamics, just compare the angle of the transom against the waterline between the Malibu and your Sanger to make sure the angle of the foil will work properly.

so essentially the wedge causes the boat to sink lower into the water instead of it sitting on top of the water like a hydrofoil?

Yep, basically its prevents the boat from coming up on plane and instead displace more water.
