I'm getting things going for a good session with the smoker today.

All fired up and ready for the cook. Pork butt, venison roast, MOINK balls, armadillo eggs and smoked cheese chips are on today's menu.



Prepped a small venison roast last night...injected with beef broth and coated in the seasoning I normally use for tri-tip roasts (pepper, onion powder, garlic powder, montreal steak seasoning). Still contemplating on the method to cook the venison. I'll put it on at the end of the cook, which is when I normally when I have the temp a bit higher and the butt wrapped for the finish.






Butt is slathered and sprinkled...

Update...pork butt coming along nicely...nice bark formed and wrapped for the finish. Got the appetizers ready and on the smoker. Ran out of room, so probably not going to do the cheese chips.

It was MOINK balls on the right, ABT's in the middle and Armadillo eggs on the left. Here is a good armadillo egg recipe: http://www.theblackpeppercorn.com/2014/04/smoked-armadillo-eggs/

With my jalapenos, I like to stuff them with a blend of cream cheese, bleu cheese, cheddar cheese and sausage, with a sprinkling of BBQ rub. The MOINK balls I did were glazed with a homemade raspberry chipotle glaze.

Thanks...I do love it, but it takes considerable time and effort. I have a few friends that like eating it, but don't want to cook it. LOL! They just come enjoy what I cook.

I was really happy with the results and thrilled at the smoker performance. For the first time since I've owned it, I can cook within inches of the firebox. The far left row of armadillo eggs were a bit hot and sort of got grilled, but from just to the right of that all the way to the other side, everything was getting even heat.

I don't BBQ too often but my neighbor took out 4-5 pigs at his feeder with 3 shots of 12ga 00 buckshot. He was kind enough to bring me one already cleaned. Probably 25#, 15# dressed - low and slow at 250 for 4h, then wrapped in foil at 275 in the oven for 6h to finish. Came out great.

RampageWake, nice...a whole pig is something I want to do...been contemplating whether I would do a small one on my smoker or built a pit and do a larger one.

I was with a friend who killed 7pigs in 3 shots. He shot 3 times and missed all 3 times so we ran the pigs over with the truck chasing them through the field. I will let you guess the amount of alcohol involved in this.

Shotgun shells scatter lots of pellets unlike a rifle shell which only contains 1 projectile.
