All of the boat's in the Supra line up that are called 'SSV' have a SunSport counterpart. Meaning the SSV is the wakeboard package on a boat that can also be purchased as a Sunsport (no tower, ballast, racks, etc).
The 21V is not offered in a Sunsport version. The 21V is the hardcore wakeboat for Supra in the 21' and under class.

I have the 20ssv and looked at the 21v. the 21 is a deeper hull and has the potential for larger ballast. 20 is a shallower hull and doesn't have the room under the seats or bow for more ballast easily. 20 is a good crossover boat, 21 is better at wakeboarding out of the box.
that said, I love my 20. easy to trailer, tons of power with the 340hp engine, and can surf like crazy, but needs additional ballast.
x2 would be a good machine as well. just depends on whether you want a crossover with a decent ski wake or more of a wakeboard machine.
good luck..

21V is an awesome wake machine, loads of room, super comfy and bucket loads of storage, but like others have said if you want to slalom or doubles ski at all, the 20SSV is your better option, I slalom behind our 08 21V, but its a bit of a wall that you have to cut through.
Good luck with your boat hunting!
