Hear a rumor that they are lifting the ban on Foie Gras. Hope so cause that stuff is delicious.

I had to look up what it was. It's probably one of those things I wouldn't like because I now know how it's made/grown. I'm sure a lot of the animals I eat are "abused", but I just never have liked the taste of veal because I know how it's raised.

what health? the kill em 2 weeks after they start feeding them.

mmm I could go for some right now. I don't get it a lot but when I do it is a treat. This was one of the best dinners ever.

I'm suprised you've never had it before. I love me some foie. Give me three weeks notice before you are coming to town and I'll fire some up.

2lbs of foie and a 17lb dry aged rib-eye roast with a salt and herb crust


Prep is a dicey process, you need good ventilation and a something to protect you from splattering fat.


but the finished process is amazing if you do it right. Foie with balsamic reduction, apple and pear compote and micro greens.
