I just did it this past weekend. We filled one of the side ballasts and the center ballast. About 5 people in the boat. 12 mph. The wake is great.

Is it better to fill the center ballast full or partly, or does it depend on the boat.

With my boat ('03 SAN), I think the wake is better with the center tank at least half filled. If I have a bunch of people on the boat, I fill it completely.

No problems letting go of the rope. The wake has a good sized sweet spot. I have a LF skimskate/brigade 4'6". It's a great board.

on the 220 san we fill one side and the belly. If we have 4 or 5 people in the boat, the wake will crest and roll. The roll (dono what it's suppose to be called) is about a 8 to 10 inch circle.
