I got my LF Omega 139 w/ Alpha bindings in the mail last week. The bindings were already on the board when they were delivered via UPS.

I tried to take them off to adjust them, and found that one of the screws would not remove. It basically feels like the screw was stripped.

I'm planning on taking my board into the shop today, what should I expect in terms of getting it fixed? A quick and easy thing, or would they need some time to work on it?

Easy fix, maybe 10-20 bucks. If you ordered the board through the shop they will probably fix it free, if they dont fix it as a good will service, then I would find a new shop
