What really are the differences in a tower and a Pylon?

tower is normally attached to the boat. Either standard equipment, or aftermarket. A pylon is just the pole that comes standard on most ski/wakeboard boats. An extended pylon is one that is near the height of a tower, and strapped down the the boat via straps to the bow and rear.
