Some basic terms, flex, sidecut, length, effective edge, width (nose, tail waist)
All of the above are components to how a board responds when riding, you can mix and match these components to change the ride of a board.
Flex - flex is just that, how much does the board flex, the more flex the "looser" it feels on the snow (less responsive) and less stable at high speeds. These boards are good better for freestyle riding as are much more forgiving.
Sidecut - Sidecut radius is the radius of the imaginary circle that you would draw if you traced sidecut. Basically if you put a board on the ground, and ran a pencil down the side of it and kept that same form for an entire circle what would it's radius be. Now what this means is the large the sidecut radius, the less depth of sidecut and the less responsive a board is. Again another attribute of a more freestyle oriented board. It the sidecut radius is smaller, that means there is greater depth of the sidecut, creating a more responsive board that is more stable at higher speed.
Length - is the total length of the board
Effective edge - is the portion of the board that is in contact with the snow, this is an important stat to look at when purchasing because it has more influence than overall length. For example someone could say they want a 159cm board, but due to its shape it could have an effective edge more similar to a 163 or 156 for than matter.
Width - are the widths of the respective areas of the board. It is important to pay attention to waist width in comparison to your foot size, larger riders are going to need wider boards. Also width plays a role in side cut as you can tell. Another interesting factor in with is that they are now making tapered boards where they are significantly wider in the nose than in the tail. This gives them better float in powder and enables people to ride shorter boards, as the nose helps keep the afloat.
I would suggest checking out the various board companies websites, many of them do a good job of explaining the details. Specifically Burton, each year I am continually impressed with the knowledge and details they share. Mervin (Lib Tech, and Gnu) is also pretty detailed. I'm sure some of the ski companies do a good job as well too (Rosignol, K2, and Salomon).
