75kgs, 143cm sounds a little big for you, but that shouldn`t be a big problem, I don`t think.
Maybe it`s because you`re not on edde, edging properly I mean, perhaps due to a little largish board.
Try applying more definite weight when you want to turn. If it`s when you`re travelling in a straight line, try a little more weight on your back foot.
But I`m not a coach, I just saw that no-one else had replied.

I call it greasy. Lots of things can contribute to that. It's not that you're doing anything wrong, I'm guessing it's just that you need to learn what causes it and how to handle them.
*Boat Speed: Yes, too fast of a pull can cause this. Just have the driver slow down a bit.
*Board speed: Essentially why boat speed causes it - cause it moves your board faster. But it only gets squirrely when your fins and/or rails aren't dug in - if you're standing up straight, for example, or if you're boarding in moderate to heavy chop.
*Position and Weight: Even distribution of weight can cause the board to get greasy. Think about the board design - sitting flat on the water (tail not down, heels and toes flat not down) the fins are as high in the water as they can be because of the rocker on the board. Thus they're not tracking well = slippery board.
Ridges: There are places within most wakes where the board can get lifted up just a touch, causing the fins - again - not to track as well as normally. There's usually a central "ridge" inside the wake that can do this, or if you're far enough back, it has split into two smaller ridges.

All of that it superfluous anyway. The point is that when the board gets like that you have three options: spin a 180, edge on your heels or toes, or lean back and dig in the tail of the board. Any of the three should regain most if not all of the boards tracking and quiet the squirrelies.

Note: As with morva, I'm not a coach either. Take this with a grain of salt - go out there and try it out for yourself.

Good luck and let us know how it goes!

What happens is an air bubble form below your board where like a fin isnt touching the board or air just got caught somewhere and it is called cavitation. It just happens sometimes, not a big deal. You can try kinda ollie a bit to get it to go away or jump.

To stop the board sliding around and prevent you from catching an edge you need to keep the handle locked onto on your front hip.
