I can clear the wake with ease, when I try for extra hight by standing tall cutting through the wake & cutting hard late I find that I am getting out of control (with plenty of hight) & then crashing. I then try cutting normal & I land & clear the wake. I want to get higher So I can start to do some grabs.

Any advice?

It's hard to say without a video, but I think the problem is you're going from a jump you're comfortable with to one significantly bigger which is far from what you're comfortable with. If you increase your jump size a little at a time so you can become more comfortable with getting more air, you'll do fine.

keep the handle at your leading hip. That will help a lot with balance and control. also, remember to not let out the rodeo hand.

Also, more air means you are using more leverage which means you will have to resist more in the air. Sometimes when you do a jump that is bigger then you are used to, you don't resist enough and this gets you off balance, typically with your arms/handle getting out of position.
