you guys have seen me flap my gums about central texas being the mecca of bbq, and recently about the two places that have popped up in austin proper and completely dominated - franklin and jmueller. well, john mueller wanted to thank his best customers for making his first year or so at the new location so great, so he invited a bunch of us to have a cookout on his only day off - monday. we could use his smokers and all that, but we had to provide the food and labor. i got austin beerworks to donate a keg to the cause and john invited several other austin chefs to the party - a sushi chef from uchiko (the restaurant where top chef texas winner paul qui is the head chef), one of the franklin pitmasters, the two owners from foreign & domestic (another kick ass restaurant here in austin), among others. the result was an amazingly glorious monday afternoon. and a bit of a hangover this morning.
my contribution - bacon wrapped gulf shrimp stuffed w/ goat cheese, mango and jalepeno. dorry about not getting any finished product photos...
wagyu ribeye
beef rib pyramid - you've never had beef ribs this good. promise.
best sausage i've ever had - it was good right off the smoker, but it was unreal 2 hours later when the fat had congealed a bit

That food looks amazing!
Also, I like the last picture of the smoker. That bad boy looks like it can cook the hell out of some meat, in an incredible way. |

I'm jealous. I really meant to check out the bbq when i was in texas, but the greasy burger joint i went to wasn't a bad substitution. Next trip out i'll have to see what they have to offer bbq wise. |

Dear god. That's some incredible looking food. Between this post and watching Anthony Bourdain's No Reservation episode last night that was in KC, I've got a major hankering for some BBQ. I'd almost drive to STL and get some Pappy's. _________________ RIP DLS.

I was wondering if there was a No Reservations or the Layover episode coming out of his Austin trip. His twitter had a good debate going the other day if sous vide had a place in the BBQ world. Is that episode airing this season or next? _________________ RIP DLS.

Bourdain was in the traditional BBQ methods are god party. He was more or less moderating the discussion. Bringing in guys like Mueller vs some other guys who thought Sous vide was a good way to BBQ. _________________ RIP DLS.

I am so incredibly jealous. I just moved to the Northeast and have been craving good Cue for the last month. I'm a fan of the bbq places in Lockhart, will have to try these out next time I'm in Austin.
FYI, I just got a meat lesson the other day. That's not really Wagyu beef. Real wagyu beef comes form Japan, Japanese meat has not been imported into the states for the last couple of years. Apparently all the restaurants touting Wagyu or Kobe beef are just ripping everyone off.
It's kinda like calling that Cinci spaghetti sh*t chili, or grilling burgers and calling it a bbq. You can call it whatever you want, but that don't make it right.
(Edit) Just wanted to point out... I have no problem ordering a fake "kobe" steak. It may not be real but it can be damn good

senorbueno, Haven't they started to raise Wagyu here in the US? When we were in China, we went to a upscale restaurant and ate wagyu ribeye. It was incredible. _________________ RIP DLS.

wakeboarderdave1, apparently there's no regulation on calling something Wagyu in the States. I know you can get beef crossbred with cows that originated from Japan. From what I gather it's more of a marketing gimmick than anything else though. But there's plenty of incredible American beef to be had in the states. The ribeye JT posted looks awesome regardless. |

senorbueno, wagyu is a breed of cattle. there is wagyu cattle in the united states, and we do cut them up and make delicious steaks out of them. they are not identical to the japanese wagyu because of the differences in climate, ranching methods and diet. definitely not a marketing gimmick - go look at a wagyu steak before it's cooked. unreal difference in marbling. |

did it again last night. 2 beef quarters this time. something's up w/ my phone so it may be a while til i get some pics up, but here's the writeup from the same blogger as last time.

Of course during the ramp-up to the main course, the men from the Shaggybevo crew put out giant kettles of queso, gumbo, pinto beans, chips and salsa, grilled shrimp, shrimp diablo, mac and cheese, smoked marrow bones and a big batch of slow cooked barbacoa served on flour tortillas that had at least a quarter cup of manteca per tortilla.
Every bite was top flight.
Addie Broyles came prancing through for a minute looking fine as Hell too. Wolf whistles marked her entrance as well as her exit but she pretended to not even notice.
About then, a hush fell over the crowd as Mueller and a couple helpers wrestled half the steer off the pit and slammed it onto the cutting table. At that point it turned into an old fashioned picking party. Everybody just set upon the beast and began tearing at the creature with ravenous cries. It was quite the scene.
There were crispy charred bits, succulent fatty bits, crusty dry bits, bloody rare bits, and my favorite; right near the spinal column-buttery beefy strands that just sort of tumbled off the vertebrae of the creature.
I would've loved to have had the carcass to make a stock but people were strutting off holding the giant bones over their heads like crude barbecue party trophies. One gal was letting her toddler gnaw off a bone that was a good 2 feet long.

i got it and hit you back - there was an initial intertron glitch, but i think it went through.
here's what i wrote if it didn't:
appetizer - the bacon wrapped jalapenos are pretty simple and you can stuff them w/ whatever you like. i used chorizo and blue cheese this time, but i've done them w/ regular sausage (whatever you use, make sure it's really crumbly) and cream cheese. i usually cut the stem off, slice in half lengthwise, clean out the seeds, fill both halves, stick them together and wrap w/ bacon. lay the bacon out on a baking sheet before you start - should be at room temp for an hour or so to get good and soft so it will stretch nicely - you want to pull it kinda tight w/ the fatty part at the last end to stretch over whatever it needs to. 1 toothpick should hold it.
side on the grill for brats....that's a tough one. my initial thought is to simply slice up a bunch of veggies, toss w/ a little olive oil and maybe some balsemic vinegar, a little bit of sea salt and grill (might have to buy a grill basket). i'd go w/ red, yellow and green bell peppers sliced about 1/2" longways, some zuchini maybe. |
