Hi, I am curious if any bindings will fit any board..looking into an '08 LF Watson and wondering if i could throw some 2010-2011 bindings on it. New to the sport, any info highly appreciated.

Almost. You might have trouble with that particular setup. This chart should explain everything pretty well:

What boots do you have? The 08 Liquid Force lineup was a 7" spread and most of the newer model bindings have a 6" plate. Sometimes you can get away with that fit in one position but you'll most likely need an adapter of some kind which can be difficult to get a hold of (not really sure where you get them, ask the shop where you get the boots from).

Most bindings will work on any board. Excellent link GnarShredd.
